Dark red-black, intense and deep in colour. The nose is powerful, developing aromas of ripe red and black fruit (bilberries, blackberries), cocoa beans, black olives (‘tapenade’), spices and hints of cherry. A well structured palate leads to wonderfully soft ripe fruit aromas and a long finish.
Enjoy with grilled meats - it will be exceptionally good with a slice of Aubrac steak grilled on a wood fire, duck with tapenade (olive and anchovy paste) or lamb with scrubland dry herbs.
Grapes are picked at optimal ripeness. The wine is matured for twelve months in French oak barrels (80 % new, 20 % one year old) for which fine grain wood is selected to develop length and elegance.
Fermentation and maceration takes place in small stainless steel tanks. Each vineyard plot is vinified separately. Juices are pumped over the must each day to enhance gentle extraction and skin contact. Maceration is maintained for three weeks under controlled temperatures to ensure the best possible extraction of colour, flavour and tannin.
