Bright pale yellow in colour with fine, continuous bubbles. The bouquet is clean and fresh, with toasted notes such as coffee, coconut and vanilla, with peach, and grapefruit, mineral tones and white flowers. The palate is fresh, fruity, creamy and light, with body from its contact with the yeasts, and hints of raw almonds and hazelnuts.
This is highly recommendable to drink as an aperitif as well as with dishes with strong, sharp and spicy flavours, although it can be paired with eggs, cheeses (cured and ripened), rice dishes, Iberic cured ham, oily fish, shellfish, oysters and caviar. Can even be enjoyed with light vanilla or chocolate desserts.
This Cava is a blend of Xarel·lo (35%), Macabeo (25%), Parellada (20%) and Chardonnay (20%). Each variety is picked and fermented separately. The Chardonnay is fermented in barrels of French oak for 8 weeks. Second fermentation takes place in the bottle for a minimum of 15 months in the cellar.
Mont Marçal Vinícola, S.A. is a winery located in Castellví de la Marca, about 50 Km south-west of Barcelona in the heart of Penedès wine region. It was founded in 1975 by Mr. Sancho when he decided to retire from the record company he was managing and start to dedicate his passion to the production of Cava and still wine. Nowadays it is fully owned and managed by Sancho’s family.
